We all NEED breakfast!  I’m lazy and not a morning person.  So, this has REALLY posed a challenge to me now that I can’t just easily pick up some packaged carb/fruit bar any more.

As I noted below…I’m lazy.  So, the fact that these are good, hold up decent in the fridge for a few days, and are EASY to prepare, make this an ideal breakfast recipe for mornings on the run.

24 Slices of thin ham
12 large eggs
Salt and pepper to taste

THOUGHTS:
Eat em not the day that you make them and then put them in the fridge for a few days for quick breakfasts.

I don’t like reheating them in the microwave, so I eat them cold on following days, which is much better than I would have thought.

1. Preheat oven to 400°F.

2. Spray a 12-cup muffin pan with non-stick cooking spray.

3. Place 2 slices of ham in each muffin cup, pressing down in the middle to make room for the egg.

4. Crack one egg into each ham cup.

5. Bake for 15 minutes or until eggs are cooked according to your preference.
